1 tbsp olive oil 1 small onion, finely diced 2 carrots, sliced 2 celery stalks, sliced 3 cloves garlic, minced 1 tsp dried oregano ½ tsp turmeric (optional, for warmth) 6 cups chicken broth 450–500 g chicken breast or thighs ¾ cup dry orzo Zest of 1 lemon Juice of 1–2 lemons (to taste) Salt & black pepper Fresh dill or parsley, chopped Optional: baby spinach or kale

Steps (one per line)
Heat olive oil in a pot over medium heat. Add onion, carrots, and celery. Cook 5–7 min until soft. Add garlic, oregano, turmeric, salt, and pepper. Pour in broth and add chicken whole. Bring to a gentle boil, then simmer 15–18 min until chicken is cooked. Remove chicken, shred with forks, and return to the pot. Add orzo and cook 8–10 min until tender. Stir in lemon zest and juice. Adjust salt and pepper. Add herbs and greens if using.
