    Heat oil in a very large skillet or wok over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks, about 8–10 minutes. Drain excess fat if needed.

    Stir in onion, garlic, and ginger. Cook for 3 minutes until fragrant and softened.

    Add carrots and sauté for 4–5 minutes so they begin to soften.

    Stir in zucchini, soy sauce, oyster sauce or miso, rice vinegar, sesame oil, and broth.
