Steps (one per line)
Mix olive oil, lemon juice, and all seasonings together. Toss the sliced steak with the marinade and let sit for at least 20 minutes, or up to a few hours in the fridge. Heat a large skillet or cast iron over medium-high heat. Add a little olive oil, onions, and peppers to the skillet. Cook the vegetables for about 7–10 minutes until softened and slightly charred, then remove from pan and set aside. Increase heat to high. Cook steak in batches without overcrowding, spreading into one layer. Cook steak for about 1–2 minutes per side, about 3–4 minutes total, until browned but not overcooked. Add the peppers and onions back to the pan. Optionally splash 1–2 tbsp water into the hot pan and toss quickly to coat everything with seasoning. Taste and adjust with more salt or lemon juice as needed. Serve with tortillas, avocado, Greek yogurt, rice, cauliflower rice, beans, or shredded lettuce.
