Ingredients (one per line)
1 kg (about 2 lbs) boneless, skinless chicken thighs or breasts 1 medium onion, thinly sliced 3 garlic cloves, minced 1 can (400 g / 14 oz) fire-roasted diced tomatoes 2–3 chipotle peppers in adobo + 2 tbsp adobo sauce 2 tbsp adobo sauce 1 tsp dried oregano (Mexican if possible) 1 tsp ground cumin 1 bay leaf ½ cup chicken broth (or water) 1 tsp kosher salt (adjust to taste) ½ tsp black pepper 1 tbsp olive oil

Steps (one per line)
Heat ½ tbsp oil in a large pan or Dutch oven over medium-high heat. Season chicken lightly with salt and pepper. Sear for 2–3 minutes per side just until browned, not fully cooked. Remove and set aside. Add remaining oil and sliced onions. Cook 5–6 minutes until golden and soft. Add garlic and cook 30 seconds more. Stir in the tomatoes, chipotles, adobo sauce, oregano, cumin, bay leaf, and chicken broth. Return chicken to the pan, nestling it into the sauce. Bring to a boil, then lower heat to medium-low. Cover and simmer for 20–25 minutes for thighs or 15–20 minutes for breasts, until chicken is fully cooked and tender. Remove chicken and shred with two forks. Discard bay leaf. Return shredded chicken to sauce and simmer uncovered 5 minutes so it soaks up flavor and sauce thickens slightly. Spoon onto warm corn tortillas and top with queso fresco, avocado, cilantro, and lime wedges.
